
Nicola Lamb’s recipe for cold rice pudding is the best and you can’t convince me otherwise. It makes a delightful dessert that can hang out in the fridge for 5 days. BUT, if you have also have a picky/constipated toddler at home, add a generous quantity of chia seeds (and an extra pour of milk) to the finished recipe. I offer it for breakfast, as a snack, or in a packed lunch.
